In the early eighties, the late country music singer/songwriter John Denver wrote a love song called Shanghai Breezes. Denver wrote the song for his wife Annie during a month long tour through China. The tender lyrics remind us of how we are all connected regardless of where we are on the planet and the many differences that divide us. And the moon and the stars are the same ones you see; it's the same old sun up in the sky; and your voice in my ear is like heaven to me; like the breezes here in old Shanghai.

With Denver's lyrics in mind, I am reflecting on the concept of connection as it relates to human life, the planet, and the vast expanse of universe that surrounds us. We are connected through blood, friendship, geography, cultural ties, historical events, the moon and stars above and the air we breathe. We are connected through our similarities and our differences. Yin and Yang, man and woman, good and bad, black and white; diversity is essential for life as we know it.

The study of Cybernetics in nature focuses on separate yet related systems such as organisms, ecologies and even entire societies; these systems are interconnected through a complex feedback loop with multiple layers of heterogeneous, interacting components. Each system has the potential to effect change in another. Even the most subtle act can result in resounding transformation across multiple layers and systems. The teachings of Zen Buddhism maintain that there is a universal path to enlightenment- a meditative state of mindfulness and presence- that connects all living things to each other.

Diversity connects us through rich traditions, distinct cultures and fascinating stories to share. The collective social consciousness tends to neglect the ties that bind us in favor of the differences that tear us apart. Melting pots help us to stay connected while gentrification can foster ignorance. The South Carolina Lowcountry is no exception. Much of what we know and love about the Lowcountry, from the architecture to the plantations, dialect and cuisine, can be traced back to our Caribbean connection, yet for those of us who live and work here the story gets lost amid strip malls, franchises and cookie cutter communities.

Back in 1670 the first group of planters and slaves set sail from Speightstown in Northern Barbados, landing at Albemarle Point on the Ashley River, where the British colony of Charles Towne was settled. With its haunting beautiful coastline, soothing balmy breezes, streets dripping with lush tropical foliage, classic single homes representing all the colors of the rainbow, and the Gullah dialect- a derivative of West Africa- it is impossible to deny that the heart and soul of the Caribbean still runs through Charleston's veins.

Names like Gibbes, Yeamans, Drayton and Middleton are reminiscent of Charleston's Caribbean roots, as Charleston was settled in part by English- born Barbadian planters and enslaved Africans. They brought to us the plantation system which became the lifeblood of Charleston's economy until the end of the Civil War. Thomas Drayton and his wife Ann left Barbados for Charles Towne and established Magnolia Plantation in 1679. The Drayton family owned the property for the next 300 years. At the beginning of the American Revolution in 1775, Magnolia was at the height of rice planting season. Several Drayton sons became involved in the war, with William Henry Drayton taking a leading role. In 1779, the plantation was ransacked by British General Augustine Prevost. John Drayton fled the plantation with his family, but suffered a seizure and died while crossing the Cooper River.

When my husband and I visited Peaches and Quiet on the Southern tip of Barbados several months ago, the Carolina-Barbados connection was readily apparent. On our departure day, we felt sorry for a family from Toronto as they braced themselves for a return to frigid temperature, while the only icy blast that awaited us was the one inside our own freezer. Perhaps it was the warm breezes drifting off the sea, the tropical flowers and emerald palms scattered like rainbow sprinkles, or the sense of tranquility enveloping my body and soul, that reminded me of Charleston. We owe much of this gift to the early settlers from Barbados and their descendents who fought for so hard for our independence, braving the elements to weave a beautiful new tapestry from the original threads of their lush island home.

Peaches and Quiet is charming and unassuming. British owners Adrian and Margaret Loveridge have created a tropical sanctuary where simple elegance meets natural beauty and their story is one of passion and determination. After 42 years working in the tourism industry, Adrian was in bad need of a holiday. He surprised his wife Margaret with a three week trip to Barbados, where the couple rented a car and explored the island. When they stepped onto the grounds of Peaches of Quiet, a divine spark was ignited. They both knew that despite the dilapidated condition of the hotel, the place held a special kind of magic. Adrian explained how the incredible view and whitewashed Moorish architecture spoke to him, compelling him to return the next day. "I believe that buildings have souls," Adrian stated. After spending several days inside his tropical oasis where balmy breezes never quit and the turquoise sea crashes against the craggy edges of coral and sandstone cliffs rising straight out of the sea, I understood precisely what he meant.

Within four days after first setting foot on the premises, the couple decided to purchase the hotel. Margaret arranged to sell her home in England while a British bank promised to finance 90% of the purchase, but subsequently pulled out of the deal. Many people would have called it quits right about here. Instead, a couple who never even considered purchasing a hotel, felt so drawn to the place that they could not imagine turning back. Adrian approached 27 different banks pleading for assistance before finding relief in the most unlikely of places- a former business rival turned friend who offered to float him the money. Now twenty years later, they continue to face a multitude of challenges and obstacles, from a scarcity of materials and supplies on the island (Adrian admits he would do anything for a Home Depot) to cultural differences in work ethic.

Peaches and Quiet was built in 1973, when a wealthy Canadian hired English architect Ian Morrison to build the hotel of his dreams. When the original owner fell into severe debt, an old sea captain acquired the place on auction. Legend has it that the hotel housed the first gambling room, where the Prime Minister of Barbados, Tom Adams, enjoyed the camaraderie of gentlemen and a constant supply of beautiful women. By the time Adrian and Margaret acquired the hotel in 1988, the hotel's 17 buildings spread over 4.5 acres were in horrible disrepair. Every roof had to be replaced, the pool required refurbishing and, according to Margaret, the place was "Overgrown and unloved." Despite the challenges, the couple shared a joint vision and devoted their lives to turning their vision into a reality.

Margaret and Adrian's service philosophy is reflected in their honesty bar, where guests help themselves to unlimited rum punch, beer, water and sodas throughout the day while keeping track of their own tab. This is by far the best value on the island, as Adrian and Margaret live by the philosophy of under promise and over deliver. The 22 guest suites are simple, clean and comfortable. The buffet style breakfast is simple and satisfying if you don't mind sharing with the gorgeous birds and friendly resident cats roaming the premises. The dinners are low key, leisurely and romantic. We dined in the soft glow of candlelight with a blanket of twinkling stars above. Margaret promotes a healthy wine list that will satisfy even the most selective of connoisseurs. The dinner menu changes daily with a choice of meat or seafood. The majority of ingredients are locally grown, the sauces are savory and light, and the fresh baked breads are well worth the extra carbohydrates.

Sitting with Margaret as I listened to her story, I wished we could extend our visit just a little longer. "We put everything we have into this property, and despite the challenges, I still believe in the beauty of this place." Margaret looked off into the distance, as if reflecting back on the past twenty years of her life, which in many ways were as jagged and unforgiving as the stone cliffs that surrounded the edge of the sea before us. With acres of lemon, lime, and grapefruit trees, multitudes of tropical flowers and sounds of the crashing surf, I could begin to see this place through Margaret's eyes and connect with her vision. "We are not here to make a lot of money," Margaret stated. "As long as we have a roof over our head, good food in our tummy and a glass of wine in our hands, we are happy, and we believe the same is true for our guests."

I thought of my own home back in Charleston and the shared history of the South Carolina Lowcountry and this lush Caribbean island. I guess that is all any of us really need, I thought to myself- delicious food, the ocean breeze and plenty of good wine. We are all connected in more ways than we even realize, and we have so many stories to share. I soaked in the beauty of my surroundings for one final moment and prepared for a long journey back across the sea.

Food Processor Pasta

We have a fall tradition that fills in the void between summer and winter holidays. We have a pasta party, or sometimes even two during September and October. The weather cools down and we can open up the house and invite friends over to make pasta from scratch. We start out with a light brunch and planning our pasta ingredients and break up into groups for each flavor. Each couple or individual brings a salad or meat to go with the finished pasta.

If you've never had homemade pasta, you need to give a try. The basic recipe is very simple, here is a quick list of ingredients for making one pound of homemade pasta:

·         2&1/4 Cups of unbleached flour
·         3 large eggs
·         Pinch of salt
·         Water, or Oil, or milk (3 to 4 tablespoons)
·         A minced vegetable for flavor (optional)

We prefer to use oil since it keeps the dough from dying out and adds a good flavor but some people like water. We also use spinach, broccoli, zucchini, or other vegetable for flavor but plain is good too. This is where the party really starts since many people bring their own special vegetable to create whatever flavor they like. And we have had some real unusual ingredients since anything goes.

We use a food processor but you could also mix this by hand. Use the plastic dough blade if you have one but the metal chopping blade will work. You combine the dry ingredients in the bowl and pulse a few time to mix well. Beat the three eggs to combine the whites and yolks. Turn the food processor on and slowly pour the eggs in and continue to process until the dough becomes a ball and works away from the edge of the bowl.

This part only takes about 5 minutes. Now the kneading begins and continues until the dough becomes smooth and elastic. Be sure to powder the working surface with flour and work quickly if you used water rather than oil since it will dry out quicker. Depending on your ingredients and effort, this part can take about 10 to 15 minutes.

We roll the dough back into a ball and cover with plastic wrap to "rest" for about an hour at room temperature. At our parties we spend this time making our sauces for each of the different pasta flavors. Pesto is always a standard but many fresh vegetable flavors are popular, some cooked and some not.

We use hand crank pasta machines (they cost about -) since they are quick and easy. Always make sure you run some test dough through any new pasta machine to clean out any residue of manufacturing (every single one I've ever bought had grease, oil, or even metal filings). Either make or buy several pasta-drying racks since the pasta will need to hang dry for about 2-3 hours before cooking (some people don't dry very long but we've found it to really enhance the flavor).

The first process with the pasta machine is to flatten portions of the dough into about 1/16 inch thick, 4 inch wide, and maybe 12-inch long lengths (the length is how thick and long the strand of pasta will be). Once you like the size and thickness you then run these slabs through the cutting section. You can have different shapes and sizes depending on your available blades. The standard fettuccine style is the most popular at our parties but you can also just cut shapes out of the dough slabs (like cookie cutters) for any shape you can make.

It's hard to describe the antics that occur when first timers go through this homemade pasta routine. Throw in a couple of glass of wine and before you know it, wet pasta is hanging everywhere. It's a good time and the reward at the end is well worth the work. We usually will find some group games to play while the pasta is drying. Sometimes there might be a football game on or some movie to watch.

When the pasta is dry, the boiling begins and within about 30-40 minutes there is a wide variety of pasta flavors and sauces to try for dinner. Out come the salads and meat dishes, and then everyone mixes and matches to their choice. Trust me when I say no one goes home hungry after one of these parties.

You could have these parties anytime of year, spring would be good too since many fresh vegetables would be available. We just started doing it in the fall and it's kind of stuck. You can always find quite a few good recipes that come with your food processor or pasta machine to try. Or just experiment on your own. It's fun and quite an economical way to through a party any time of year.

Finish off with a black bow by punching 2 holes in the top middle of the cardstock, guiding the ribbon through the holes and tying a little bow. Another unique idea would be to send an invite in the shape and fashion as a plane ticket to Paris! Or why not visit you local dollar store or souvenir shop and purchase some Paris postcards and write all of the party details on the back. Whichever you choose, do not be afraid to glam them up with sparkles, glitters and bows!

Decorations: Pink, Black and White everything and don't forget the Pink Poodle tableware and supplies to really set the theme! Use helium balloons on the mailbox, in doorways, on chairs, as centerpieces, on vases, floating freely and pretty much anywhere you can tie a balloon onto. Decorate your ceiling by finding the center point or a light fixture and attaching 12-14 twisted black and pink streamer lengths to it. Floating them out a good 2 feet apart and attach them to the corner edges of the ceiling. Decorate your walls with enlarged images of the Eiffel Tower, Pink Poodles, Berets, Eiffel Tower, Mimes or any symbols of France you can think of. Hang France Travel Posters, postcards and cutouts from high fashion magazines. The table setting must be Sparkly, Fabulous and Tres Chic! Start with a black tablecover to make the pink poodle tableware pop and spread white or opalescent sparkles or gems on the table to look like diamonds. Have 2 or 3 vases filled with white roses and adorned with a black bow to use as your centerpieces. Finish off by tying a pink tulle fabric bow onto each chair. This will surely set a very elegant mood.

Activities: As the party guests arrive, invite each on of them to be a French artist. Provide a table or area with colouring tools, different papers, template pages of poodles, cotton balls ribbons, sequins, felt and glue.

Ask them to create a picture of a Pink Poodle by colouring the page in or decorating the outline with the craft supplies provided. Another craft idea is to make a very fashionable fancy choker collar that the guests can take home and wear. Use a heavy stock ribbon or craft foam in black or pink and cut to size to fit each child's neck about 1.5 inches wide. You want it snug - but not tight! Attach a piece of self stick velcro to each end of the strip and let the girls decorate with gems, jewels, sequins, beads and glitter. When completed the party guests will look Tres Magnifigue! Give a short French lesson for the guests to learn a few basic words and phrases so that they may use them throughout the party. For example: Bonjour (Hello), Merci (Thank you), Au Revoir (Good Bye), Joyeux Anniversaire (Happy Birthday), Tres Chic (Very Stylish) and Sil Vous Plait (Please) and many more! Another idea along this line is to place conversation cards around the party room and table. Have the phrases and questions written in French and translated into English underneath. The guests will have a good laugh trying to pronounce the French version aloud! Have them answer or comment in English but ask them to use at least one French word they learned.

And Finally, hold a French couture fashion show. Visit your local Good Will store, your closet, your mom's, grandmom's and friends closet's too and collect hats, scarves, boas, gloves, purses, shoes and costume jewelry. Have a large selection so each girl can choose 3 or 4 items each. Divide the guests into 2 groups with one group displaying their creations on the runway and the other kids in the audience enjoying the show. Be sure to have one adult in the dressing area helping and plenty of music playing so the girls can model and strut along to.

Menu: A Bistro Menu should consist of the following: Miniature croissants filled with turkey/lettuce/cream cheese, Finger Sandwiches cut out with a bone shaped cookie cutter, Fromage (cheeses), Crudite (Veggies & Dip), Pastries, Melon Ball Salad, Chocolate Dipped Strawberries and French Crepes filled with whip cream and sliced berries. Serve all food in your best china and on silver trays. The beverage of choice is pink lemonade or for a more fancy treat, serve French Sodas. A French Soda is simply 7up with grenadine to taste, topped with whip cream and a cherry and served in a wine glass. The French Crepes could be used as the birthday dessert or if you want something more traditional go for cupcakes or a full cake covered with white icing, pink polka dots (gumballs) and black fabric bows around the edges. Top with a few poodle candles and Voila! A perfectly decorated dessert!

Cinnamon: "my fortune is yours"

Originating in Ceylon (now Sri Lanka), cinnamon has been a highly prized spice for centuries. Cinnamon is mentioned in the Bible, and the Chinese wrote about cinnamon as far back as 2800 B.C. The ancient Egyptians used it for embalming, and medieval Europeans used it as a preservative.

Around 1 A.D., 350 grams of cinnamon were equal in value to 5 kilograms of silver; in other words, cinnamon's value was 15 times its equivalent weight in silver! It's no wonder that hundreds of years later, the English Victorians referred to the cinnamon plant as a flower meaning "my fortune is yours."

Over the centuries, cinnamon has been used as a preservative and flavoring, as well as for medicinal purposes, such as for morning sickness, diarrhea, coughing, and sore throats. It has also been valued as an astringent, antiseptic, and aphrodisiac. Currently some researchers are studying how beneficial cinnamon may be to reduce blood sugar levels in diabetics.

Peppermint: "a magical potion"

Peppermint also has been enjoyed throughout the world for centuries. For example, the ancient Greeks and Romans created festival crowns out of peppermint leaves, flavored their sauces and wines with it, and prescribed it for medicinal purposes.

Peppermint has been valued as a symbol of wisdom and virtue. But, paradoxically, peppermint also has been valued as a magical plant for passion and love, using the power of the goddess, Venus.

Legends around this plant have evolved since the Greek myths linked peppermint to Hecate, ruler of witches and magical creatures. Peppermint has been a common ingredient in recipes for magical potions, and it has been said that:

In English folklore, finding a flowering mint plant on Midsummer's Day brought eternal happiness.
In French folklore, carrying a bouquet of mint and St. John's Wort protected you from wicked spirits.
In Italian folklore, using peppermint helped to protect children from sickness and silk worms from evil spells.
Peppermint has long been thought to be particularly useful for digestion, dizziness, seasickness, and nausea. It has also been used as an anesthetic or antiseptic.

Modern-day commuters' benefits

Although the fortunes of war over cinnamon and the magical spells of peppermint are disappearing into the past, these two plants continue to be associated with delicious flavors and therapeutic effects. A recent study at Wheeling Jesuit University has added new benefits for commuters. Results of the study, presented at the 2005 Association for Chemical Reception Sciences Conference, showed that commuters were affected by peppermint and cinnamon while driving. Here are some recipes to add cinnamon and peppermint to your commute, as well as a delicious, healthy recipe for when you get home.

Recipes

Cinnamon Car Freshener

1/4 cup applesauce

1/3 cup ground cinnamon

In a small saucepan, heat applesauce on low heat and stir constantly with a wooden spoon. Using a teaspoon, gradually add cinnamon until the mixture turns soft and begins to pull away from the sides of the pan. Remove from heat.

When cool enough to handle, knead remaining cinnamon into dough to make a pliable, clay texture. (If necessary, wear gloves to prevent the cinnamon from irritating your skin.) Roll flat and cut a circle; or use cookie cutters to cut out any other desired shape. Use a pencil to poke a hole about 1/2 inch from the edge.

Heat oven to 200F. Put the cinnamon circle on the oven rack and bake until completely dry. (Check every 5 minutes.) Remove from oven. When cool, tie a ribbon through the hole and hang from your car's rearview mirror.

Commuter's Peppermint Tea

1 cup boiling water

1 Tbs. peppermint leaves

Pour boiling water over peppermint leaves into a small teapot, and let it steep 5 to 10 minutes. Strain and pour into a cup. Breathe in the peppermint aroma as you savor the taste of the hot tea.

Peppermint Lip Balm

1 Tbs. beeswax

1 Tbs. pure vanilla extract (don't use imitation extract)

3-5 drops pure peppermint extract

Fill a small saucepan 1/3 full of hot water and place on stovetop. Put beeswax and extracts into a glass measuring cup, and then place in the saucepan. Heat the water and stir frequently until the beeswax melts. Pour into clean, travel-sized containers. Close tightly, and store in the refrigerator until ready to use.

Moroccan-Spiced Chicken and Lentils

1 pound (2 cups) red, orange, or green dried lentils

8 cups water

1 tsp. salt

1/2 cup golden raisins

1/2 cup dried apricots, chopped

8 oz. (1/2 of a 1 lb. pkg.) frozen, chopped spinach, thawed and rinsed

1/2 cup olive oil

1/4 cup white wine vinegar

2 Tbs. ground cumin

1 Tbs. chili powder

2 Tbs. olive oil

1-1/2 lb. boneless, skinless chicken breasts, cut into thin strips

2 garlic cloves, minced

6 scallions, chopped

1 Tbs. ground cumin

1 to 2 Tbs. chili powder

1 tsp. ground cinnamon

Place the dried lentils in a colander; rinse and pick through to remove any debris. In a large pot, bring water and salt to a boil. Add lentils, cover and reduce heat to medium. Simmer until lentils are tender, approximately 25 minutes. Drain well. Mix in raisins, chopped apricots, and spinach; rinse and drain again. Place in a large serving bowl. Mix together olive oil, vinegar, cumin, and chili powder. Pour over lentil mixture and toss. Set aside.

Heat 2 Tbs. olive oil in a large skillet over medium-high heat. (If available, use a ridged, grill-style skillet.) Add chicken strips and saute' until thoroughly cooked. Add remaining ingredients and cook until garlic, scallions, and spices are fragrant. (If necessary, add 1/4 cup warm water to keep from browning too quickly.) Place chicken mixture on top of lentil mixture. Serve warm or chilled.

Accepting and loving the unique beauty of your body will set you free and give you confidence and power!

Food in the form of protein, carbohydrates and fat are your main sources of energy (calories). Take in more energy than you need from any of these and your body will store it as fat. So fat loss is all about energy balance. Simple, right? You need to eat smarter, not less. When you restrict calories below the minimal amount of energy required to feed your nervous system, your body thinks it is starving. When this happens, not only does your body burn muscle for fuel, but while doing so, your body is actually slowing down your metabolism.

When you lose muscle, you are lowering your metabolism. Lose the mindset: "eat less, weigh less." Restricting your calories will guarantee you a slower metabolism. Dieting signals deprivation to your body and sparks a biological drive to prime the body to maximize food intake and minimize energy burned to save itself. Making the best food choices is your secret weapon in the quest for over 40 fitness. Eating supportively will help you boost your metabolism, burn more fat and increase your energy dramatically. The goal here is to be FIT and HEALTHY and look great for YOUR body type.

Believe it or not, good nutrition is that powerful! And you can change your eating (or lack of eating) habits bite by little bite. Aim for at least one healthy choice each day and more supportive than the day before. Go for 2-3 improvements each week. Making these small nutritional changes will quickly add up to amazing results as you gain control over your metabolism.

"My life is chaotic enough right now! I don't have time!" Well, you don't need a lot of time - but you will need some. And if living a healthy lifestyle is important to you, you'll have to make a commitment. But the more you do it, the more you'll want to do it. So what are they? Cardio exercise increases your metabolism so that you burn energy at a higher rate than if you weren't exercising. It reduces your appetite by turning on your sympathetic nervous system. This activates your "fight or flight" response . What does that mean? Try this:

The next time you feel a twinge to binge, take a quick walk or jog. Notice how you feel after you workout. Your hunger will lessen or disappear altogether. Cardiovascular exercise, resistance training and flexibility exercises will help you lose extra weight that stresses out your joints. You'll strengthen the joints and elongate the muscles which reduce your risk of injury in your day to day activities.

Barrier 5: Leaving Your Goals to Chance

As a personal trainer, I see many clients grabbing their weights and strapping on their running shoes before they know exactly what it is they want to achieve. My advice to them and to you is - Leave Nothing to Chance. Research shows that writing down your health and fitness goals makes them 95% more achievable. The more specific you are about what you want, the more likely you will do what is necessary to get it. First, check your expectations. Are your goals reasonable? While it would be nice to lose 20 pounds in 7 days, there is no safe way to make that happen. Unrealistic expectations undermine your efforts and make it difficult to stay on track. Look beyond the obvious. Set goals that can be measured with something other than a bathroom scale - like lowering your blood pressure by 10 points or increasing the distance you can walk or jog. When it comes to exercise, the most common excuse cards that get played are the queen of "not enough time" and the ace of "not convenient". You'll always be busy. And it's much easier to sit with a glass of wine or a bowl of ice cream than to jog to the corner or do crunches on a stability ball. But the truth is - they aren't valid excuses. You don't have to go to the gym, and you can carve out 30 minutes a day to work out. For years I exercised either first thing in the morning before work or at night after the kids went to bed with nothing except a couple of exercise videos, a few hand weights and a workout bench I bought at Goodwill for 5 bucks.

Start right where you are. If you don't (or can't) make time to do this FOR YOU, perhaps the problem isn't the fact that you're time crunched. Perhaps your life has gotten too out of control and the question now becomes priorities. Your health and well being should be at the top of the list! You can get started with minimal equipment and space. It's easy and inexpensive! The best advice I can give you is JUST GET STARTED. Start moving. Fidget! Ever notice those slim, hummingbird type people? Well, studies show that it isn't a mysterious food substance, cell, or hormone that makes these folks burn up fat like an iron frying pan - it's movement. Obviously, it's not THAT simple, but it is true that the more you move, in very subtle ways, the more calories your body will burn throughout the day. And that will have more than subtle positive effects!

Your body composition shifts as you age. Weight gain after 40 and especially after age 50 is very common. Prepare two packages of instant vanilla pudding according to package directions for pie filling. Stir 2 cups whipped topping into pie filling. Spread half of this mixture over bananas. Layer remaining bananas and then rest of pie filling. Top with 1 cup toasted coconut. Chill about two hours or until set.

2. Mini Pies. Using two prepared pie crusts, cut three inch circles (I use the top of a glass as my "cutter"). Fit each pie crust into a muffin cup. Prick the pie bottoms and bake according to package directions. After pie crusts are cooled, fill with assorted pudding flavors. Use either package mixes or even easier, already prepared pudding flavors. Top each pie with fresh fruit, chocolate chips, nuts, sprinkles or chopped candies depending on the pudding flavor.

3. Mini Tarts. Fill mini phyllo cups with fresh fruit and whipped topping.

4. Parfait Cups. Layer berries and whipped topping in small plastic cups. For a more formal presentation use wine or cordial glasses.

5. Mini Cheesecakes. Prepare a no bake cheesecake mix according to package directions but instead of using a pie plate, divide mix evenly among 12 cupcake papers. Top with fresh fruit, pie filling or candy morsels.

6. Decorated Cookies. Mix confectioner's sugar and a small amount of milk until spreading consistency. Use to frost store bought sugar cookies. Decorate with seasonal sprinkles or sugars.

7. Chocolate Strawberries. Wash and dry 1 pint of fresh strawberries. Chill for 20 minutes. In a microwavable bowl melt 12 oz. milk chocolate and 1 tsp shortening at 15 second intervals until melted, stirring each time. Dip strawberries into milk chocolate covering half of the fruit. Place on foil lined baking sheet and cool in refrigerator.

8. Gourmet Brownies. Prepare one box of brownie mix. Add to prepared mix 6 ounces of chocolate chips. Spread in pan. Top with 1 cup chopped nuts. Bake according to package directions.

9. Chocolate Nut Fudge. Combine a 14 oz. can sweetened condensed milk and 12 ounces of chocolate chips in a bowl. Microwave one minute. Stir until smooth. Add ½ cup chopped nuts. Pour into a greased 8 X 8 pan. Chill until firm.

10. Cupcakes. Using a simple box mix, prepare cupcakes according to package directions. Frost with ready-made frosting. Use seasonal colored sprinkles to decorate in holiday colors.
